Crawfish are deeply rooted in East Texas and Louisiana culture, dating all the way back to the native Americans and the early European settlers. Jefferson – You haven’t lived, or at least lived like you’re from East Texas, until you have eaten a cornbread sandwich! On our last visit to Jefferson we meandered into Kitt’s Kornbread Sandwich and Pie Bar on North Polk Street. The smell of sweet cornbread was wafting through the air, and the pies in the case looked delightfully tempting.
