This Ain’t Your Mama’s Cornbread!

Jefferson – You haven’t lived, or at least lived like you’re from East Texas, until you have eaten a cornbread sandwich! On our last visit to Jefferson we meandered into Kitt’s Kornbread Sandwich and Pie Bar on North Polk Street. The smell of sweet cornbread was wafting through the air, and the pies in the case looked delightfully tempting.

We sat down and took a look at the menu. There were all sorts of mouthwatering combinations of broccoli, jalapeno, and traditional cornbread, adorned with ham, bologna, chili and such. It was clear we were going to need a few minutes.

After studying the menu for a few minutes we decided we wanted something that was not on the menu. The vegetarian sandwich sounded amazing, particularly because it included spinach, but the Redneck Sandwich sounded pretty tasty as well. Therefore, we decided to have a vegetarian, jalapeno cornbread sandwich with a slice of fried bologna. Our waitress was very friendly, and although she did raise her eyebrow when we asked for the vegetarian cornbread sandwich with a slice of friend bologna she turned our order in with no questions asked.

A few minutes later our Redneck-Vegetarian jalapeno cornbread sandwiches arrived. Much to my delight I was able to pick up the sandwich without any crumbling at all. This recipe has been perfected in order to be able to eat like any other sandwich. As a matter of fact, the only sandwich at Kitt’s Kornbread Sandwich and Pie bar that cannot be picked up and eaten is The Texan, which consists of Texas Chili and cheese served between cornbread, which we hear is pretty darn good, too.

Sinking our teeth into that Redneck-Vegetarian sandwich was like biting down into East Texas heaven.

  1. if the cornbread is sweet….well no, it certainly not my mommy’s .   Texas cornbread is NOT sweet.
