Transform Your Leftovers

Thanksgiving- we anticipate, we cook, we eat and eat and eat. We go house to house bringing food, taking food and before you know it, you have three large disposable tin pans in your fridge staring you down every time you open it! Well today I am hopefully going to give you some ideas to freshen up those leftovers.
Let’s face it. Turkey Day leftovers are not the same as regular leftovers. You eat so much of them, it gets to a point where you can’t stand to eat another bite! You break out in sweats, you get frustrated – STOP!!!!!!!!!! Breathe. I am here to give some super easy ideas to totally change your holiday leftovers and actually make you look forward to eating them.

Ingredients
Take your left over smoked or fried turkey. Measure, hmmmm… let’s say 2 cups of diced turkey. 1/2 cup of REAL mayo- if you like more, add it if you like less, don’t add so much.
1/2 cup green onion
1 cup craisins
Mix!
Now, as always on the Black Apron, I encourage you to make every recipe your own. If you love purple onion, use that instead. If you have left over pecans or walnuts- add them! My only warning on this dish is not to over season. The turkey has already been seasoned so wait until the finished product until you start adding salt and pepper.
Aww poor us, someone has to be quality control!
Now of course the frugal side of me says, “Take left over dinner rolls, cut them in half and toast them a skillet and make turkey sandwiches!” The “are we really eating leftovers again” side of me says, “Go out and buy some sourdough bread, toast it and make your sandwiches.”
